Delicious Chocolate Babka

I don’t think there are enough words to describe my chocolate babka recipe, it’s decadent, rich, soft, moist, buttery… it will just make you happy!

Delicious chocolate babka, I first tried you at New York Bread’s Bakery while I was attending my bread program at the International Culinary Center (I highly recommend going to the Bakery if you are in New York). This chocolate babka mecca is an Isreali Bakery with the most amazing babkas and baked goods you will ever try.

But how can we make it at home? you have found your place as I will guide you step by step in making your own babka with my recipe & video below!

If you are not familiar with chocolate babka, its an eastern europe bread made specially for celebrations and holidays. However, during this crazy year 2020 we all deserve a treat at least once a week haha don’t you feel the same way?

Remember that if you want to make this bread savory instead of sweet, you can also experiment with cheese, pesto, veggies, etc! It’s versatile and you can follow the same instructions when changing the filling.

Chocolate Babka Filling Recipe

Equipment

  • Rolling Pin
  • Pan (small)
  • Spatula

Ingredients
  

  • 50 grams Sugar
  • 30 grams Cocoa powder
  • 130 grams Dark chocolate
  • 120 grams Unsalted butter

Instructions
 

  • Mix all the ingredients in a pan, and mix on low heat until it becomes a paste. Let sit until it cools down before using it to spread inside the chocolate babka.

Babka Glaze Recipe

Add shine and moisture to your chocolate babka

Equipment

  • Pan
  • Spatula

Ingredients
  

  • 1/3 Cup Water
  • 2/3 Cup Sugar

Instructions
 

  • Mix the water and sugar in a saucepan, bring to a boil over medium heat. When the sugar is fully dissolved, remove from the heat and set aside. You will use once the babka is still warm.

How to assemble the chocolate babka

Equipment

  • Loaf pan (approximately 10'' by 5'')
  • Brush
  • Rolling Pin

Instructions
 

  • Divide the dough in 500 gram pieces
  • Roll the dough into a rectangle of approx 20 inches by 10 inches. You shouldnt need flour the dough as it won't be sticky.
  • If it does stick to the table or the rolling pin, slightly sprinkle flour as needed.
  • If the dough "fights back" when rolling, let it rest for 10 minutes. That will relax the gluten and allow you to stretch it more. Keep letting it relax if you struggle again.
  • Put the filling inside, and leave the edges of the dough without filling (approximately 1 inch).
  • Roll the dough and seal the edges. With a knife, cut the log in half, lengthwise.
  • With the filling looking up, shape both piecesinto a braid.
  • Heat the oven to 350°F, and bake for 30 minutes. Then tent lightly with a foil and bake for 15 more minutes.
  • After the Chocolate Babka is still warm out of the oven, brush the glaze over it. It will seem like a lot but it’s never enough!
