How to assemble the chocolate babka

Equipment

  • Loaf pan (approximately 10'' by 5'')
  • Brush
  • Rolling Pin

Instructions
 

  • Divide the dough in 500 gram pieces
  • Roll the dough into a rectangle of approx 20 inches by 10 inches. You shouldnt need flour the dough as it won't be sticky.
  • If it does stick to the table or the rolling pin, slightly sprinkle flour as needed.
  • If the dough "fights back" when rolling, let it rest for 10 minutes. That will relax the gluten and allow you to stretch it more. Keep letting it relax if you struggle again.
  • Put the filling inside, and leave the edges of the dough without filling (approximately 1 inch).
  • Roll the dough and seal the edges. With a knife, cut the log in half, lengthwise.
  • With the filling looking up, shape both piecesinto a braid.
  • Heat the oven to 350°F, and bake for 30 minutes. Then tent lightly with a foil and bake for 15 more minutes.
  • After the Chocolate Babka is still warm out of the oven, brush the glaze over it. It will seem like a lot but it’s never enough!
